tomato sauce
3 slices of Tomme Catalane Urgélia PDO cheese

For the chicken marinade :

  • 10 cl olive oil
  • 10 cl white vinegar
  • 1 sprig rosemary
  • 50g of little onions
  • 50g of carrot cut in sticks
  • 1 laurel leaf
  • 50g of red peppers strips
  • 1 garlic clove
  • 2 chicken breasts

 

For the coca dough :

  • 1 glass of olive oil
  • 15g of flour
  • 1 glass of milk
  • 1 egg
  • 250g spelt flour or Kamut flour

 

Preparation

How to prepare the chicken marinade :

In a sauce pan, put the olive oil, the white vinegar, the rosemary, the litlle onions, the carrots, the red peppers, the laurel, the garlic and the chicken.
Let simmer during 30 min and then put ii in the fridge during 8 minutes.

How to prepare the coca dough:

Mix the 2 flours with the egg, the milk and olive oil.
Add more flour if necessary.
Let stand during 2 hours.

 

Using a rolling pin, spread the dough and cut rectangles.
Bake 12 minutes at 90°C.

On the rectangle, spread tomato sauce, chicken and vegetables.
Cut 1 slice in dices of Tomme Catalane Urgélia cheese.

Bake 3 min at 200°C.
