For the stuffing :

  • 400g of chicken
  • 1 black sausage
  • 100g half cooked foie
  • 200g beef entrecote

 

For the bechamel sauce :

 

  • watercress
  • grated Tomme Catalane Urgélia PDO cheese
  • Cannelloni dough

 

Preparation

How to prepare the stuffing :

Mince the chicken, the beef and the sausage.
Brown the meat in a frying pan with olive oil.
Add some red wine and the half-cooked foie.

How to prepare the bechamel sauce :

In a frying pan, melt the butter and add the flour.
Add the cream and the milk, the white pepper, the nutmeg and salt.
Finally, add the grated cheese.

Boil the dough and stop the cook in ice water.
Stuff it and wrap it.
Put it in a dish and cover it of bechamel sauce and cheese.
Bake 10 minutes at 220°C.
Serve sprinckle with watercress.
