Most of the time, custards are sweet but they can also be salted.

In the video, we propose a salted version with Tomme Catalane Urgélia PDO cheese.

For the custard :

  • 30 cl of milk
  • orange skin
  • lemon skin
  • 1 cinnamon stick

 

For the mousse :

 

Preparation

How to prepare the custard  :

In a sauce pan, boil the milk with the orange, the lemon and the cinnamon.
Let infuse outside the heat during 20 min.
Remove all the chunks.

Cut the cheese into dices and add them to the rest.
Wait until the cheese melts.
Filter.

 

Once lukewarm, add one egg and 3 egg yolk.
Keep the egg white.
Mix et pour in individual cups;
Bake them at 160°C during 20 minutes.

How to prepare the mousse :

Beat the egg whites to form stiff peaks with sugar.
Add grated ginger and apple jam.
Mix and put some mousse on top of the custard.
